Rest day
Day 6 of the Paleo challenge keep to the game plan it might be the weekend but that's no reason to give in!!
Here is a Paleo meal you can all enjoy
Moroccan Chicken with Zatar Spiced Greens
Serves 2 3 Blocks or 1 5 Block Meal
Ingredients:
Marinade
2 tbs Olive Oil
2 Cloves Garlic
1 tsp Cumin
1 tsp Ground Ginger
1 tsp Chilli Flakes
1 tsp Cinnamon
300 g Chicken Breats (Organic or Free Range)
2 Heads of Brocolli
½ Cup of Baby Peas
100 g Green Beans
60 g Goats Feta
*2 tsp Zataar
1. Wash and prepare all vegetables and separate into bowls. Bring a large Pot of water to boiling point
2. Combine all marinade mixture into a bowl
3. Cut Chicken into cubes and mix well with marinade and set aside for at least 10 minutes.
4. Heat Olive Oil in pan and seal chicken pieces until golden brown on each side.
5. Whilst chicken is cooking place all vegetables into boiling water and blanche for 15 seconds.
6. Strain vegetables and leave in pot to heat through.
7. Once chicken is cooked through take off heat.
8. To serve portion chicken and toss zataar through vegetables and crumble through feta.
